Install instructions and version number corrections (#148) 
* Add MacOS install instructions

* Change version name argument

When using the -V command to get the version you are given 'helix-term x.x.x', I changed this to just helix as it makes more sense.

Still need to implement the clangd encoding negotiation, but it's
a start. Should also manually override to utf8 for pyls.
